These cookies provide sustaining energy to start your day or maintain an adventure. They’re a healthy way to satisfy a treat craving. Gluten and grain free, they’re high in good fat and low in carbs, and are sweetened only with dates. May they brighten your morning and nourish your day!

- 2 cups whole almonds
- 2 tablespoons chia seeds
- 1 can coconut milk
- 2 tablespoons cinnamon
- 2 teaspoons turmeric
- 1/2 teaspoon baking soda
- generous dash of salt
- 6-8 dried dates (to your taste)
- 3-5 tbsp fresh ginger (to your taste)
- 1 whole egg + 1 egg white
- 1/4 c coconut oil
- Grind/food process almonds to course flour (some chunks ok)
- Stir in chia seeds and other dry ingredients
- Stir in finely chopped dates and ginger
- Mix whisked egg and coconut oil, add to dry ingredients
- Shape into ~12 cookies
- Bake at 350° for 11 minutes (flip cookies once after 8 minutes)
